Apple Cake

This recipe comes from one of my neighbors in Maryland. I have been making this cake for over 30 years. It has always been one of my favorites. It’s easy to make and freezes well.

Ingredients

  • 2 Cups all purpose flour
  • 1 Teaspoon grated nutmeg
  • 1 ½ Cups of sugar
  • 1 Teaspoon ground cinnamon
  • 2 Beaten room temperature eggs*
  • 1 Teaspoon baking soda
  • ½ Teaspoon salt
  • 1 Teaspoon baking powder
  • ½ Cup dark Rum, optional*
  • 1 Cup raisins
  • 5 Medium apples peeled
  • 1 Cup chopped walnuts and chopped into bite size pieces
  • 1 Teaspoon Vanilla extract
  • 1 Cup softened butter

Instructions

Soak the raisins in the Rum for about 30 minutes then drain.

Using an electric mixer, mix all ingredients together except for the raisins, nuts and apples. The batter will be thick. Now add the raisins, nuts and apples. Pour into a 3×13 baking dish.

Bake at 350* for 50 to 60 minutes.

*Always use room temperature eggs when baking. They mix better with the butter.
