Bean Salad

Bean Salad

This is a great alternative to macaroni or potato salad. My mother made this every summer especially for cookouts. You can use the 3 beans I’ve used or you can add different beans and make it your own.

Ingredients

  • 1-15.5 can of green beans-drained
  • 1-15,5 ounce can of garbanzo beans-drained
  • 1-15.5 ounce can of dark red kidney beans-drained and rinsed
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped celery
  • 1-cup of diced onion
  • 1-4 ounce jar of pimento
  • 2/3 cups of apple cider vinegar
  • 3/4 cups of sugar
  • 1/3 cup vegetable oil
  • 1-teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

Stir together sugar, vinegar, oil, salt and pepper until the sugar is dissolved. Combine beans, green pepper, celery, onion and pimento in a large bowl. Pour sugar mixture over beans. Cover and refrigerate overnight stirring 3 or 4 times. Drain before using. Reserve the vinegar mixture and reuse,
