Breakfast Burritos

I make this filling and freeze it in individual servings for a quick breakfast. It is also great if you are feeding a crowd-they can fix their own.


  • 2 pounds of sausage, hot or mild
  • 1 large onion, diced
  • 2 large green peppers, diced
  • 1 teaspoon salt
  • 2 cups green chilis (I use Southwestern style)
  • 8-10 large tortillas


In a large skillet, brown sausage with the onions, green pepper and salt. Drain the grease before adding the chilis. Simmer until the juices are cooked away-about 15 minutes.

Spoon into a tortilla and add toppings or freeze in individual baggies. We top ours with scrambled eggs, salsa, sour cream and shredded cheese.
