Breakfast Muffins

This recipe comes from Benefis Hospital in Great Falls, Montana. You can put any combination of meats, veggies and cheeses in these muffins. They freeze great! We throw them in our microwave for a quick breakfast!

Ingredients

  • 9 Egg Beaters (2 ¼ cups)
  • 1 ½ cups Bisquick
  • 3 cups Half and Half
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 3 handfuls of cheese

Instructions

Mix all ingredients together in a large bowl and add your favorite ingredients:

1 pound of cooked sausage-we like hot Italian

1 pound of cooked chopped ham

1 pound of cooked crumples bacon

Diced green, red or yellow peppers

Diced yellow or green onions

Green chilis

Spinach

Mushrooms

Your choice of cheeses-Cheddar, Swiss, Mozzarella, Feta, etc.

Spray jumbo cupcake pans with a cooking spray-do not use liners. Bake at 350 for 25 to 30 minutes of until set. Cool completely in pan before removing. Wrap and freeze. To thaw put in the refrigerator overnight or use your microwave.
