Chicken Enchiladas

Ingredients

  • 4 chicken breast halves-cooked and shredded
  • 1(15OZ) can tomato sauce
  • 1 medium onion- chopped
  • 1 cup diced green chilis-medium heat
  • 1 tablespoon dried parsley
  • 1 teaspoon dried oregano
  • ½ teaspoon pepper
  • ½ teaspoon salt
  • 1 ½ tablespoons chili powder
  • 1 cup sour cream
  • ½ cup water
  • ½ large green pepper-chopped
  • 1 clove of garlic- minced
  • 2 cups shredded cheddar cheese
  • 1 jar(12oz) salsa or taco sauce-your preference
  • 8 each10 inch flour tortillas

Instructions

Preheat oven to 350

Put shredded chicken in a skillet along with onion, ½ cheddar cheese, sour cream, parsley, oregano, salt, pepper and chili powder.

Stir until cheese is melted. Add water, garlic, green pepper, green chilis and tomato sauce. Heat through. Put ½ to ¾ cup of mixture in each tortilla and roll up. Place each filled tortilla in a greased 9×13 baking dish. Cover with salsa or taco sauce and

sprinkle with remaining cheese. Bake at 350 for about 25 minutes or until bubbly. Top with sour cream, shredded lettuce and diced tomatoes.
