- 1 Small onion sliced
- 1 Each red, green and yellow peppers, sliced
- 1 Cup of Grated Monterey Jack cheese
- 8 10- inch tortillas
- 2 Cups shredded cooked chicken
- 2 Tablespoons olive oil
In a small skillet, containing the olive oil, saute onions, peppers and cooked chicken until onions and peppers are soft.
Heat a large skillet to medium, place one tortilla in pan, top with chicken, onion, peppers and cheese. Place another tortilla on top of mixture. Heat until bottom tortilla is browned-flip and do the same with the bottom tortilla. Heat thru until cheese is melted.
Remove from skillet, cut into wedges and top with salsa, sour cream or your favorite toppings!
