EGGS IN PURGATORY

Ingredients

4T olive oil                                ½ cup cherry tomatoes

1 cup chopped onion                  ½ cup roasted red pepper, chopped

2 cloves garlic, minced              1-28 ounce can, diced tomatoes

1/4t red pepper flakes                 1t salt

4 large eggs                              4 thick sliced hearty bread, toasted

½ cup Parmesan cheese            3T fresh basil, chopped for garnish

Instructions

In a skillet, heat oil. Add cherry tomatoes and cook for 5 minutes until they start to burst.

Add onions and cook until soft then add the red peppers and garlic. Stir for a couple of minutes.

Add can of diced tomatoes along with red pepper flakes and salt. You will need to have the sauce bubbling to cook the eggs.

Make a hole in the sauce and spoon in the eggs. Cover the skillet and cook the eggs 3-4 minutes.

Once the eggs are done, remove from skillet and sprinkle with cheese and basil.
