We always made this in our café for our Italian nights. It is not a low-calorie dish so we only have it on special occasions.
- 4 tablespoons butter
- 4 tablespoons flour
- 2 cups heavy cream
- 1/8 teaspoon white pepper
- 1/8 teaspoon cayenne pepper
- ¼ teaspoon salt
- 1 package fettuccine, cooked
- 2 cup grated Parmesan cheese-divided
In a Dutch oven, melt butter. Stir in the flour to make a roux. Add the cream, pepper, cayenne and salt. Stir until thickened. Add the Parmesan and stir to melt.
Toss in the pasta, serve. Top with more Parmesan if wanted.
