Graham Cracker Dessert

This is something my mother always fixed for Christmas dinner. The whole family loved it. I now make it occasionally since it is very rich. Simple dessert but oh, so tasty.


  • ½ lb. graham crackers, crushed
  • ½ cup of Egg Beaters
  • 2 cups confectioner’s sugar
  • 1 t. vanilla
  • 1 (20 oz) can crushed pineapple, drained
  • ½ pt. heavy whipping cream


Layer ½ the cracker crumbs into a 9×13 dish.

Whisk together the Egg Beaters, sugar and vanilla.

Stir in the pineapple and cream.

Pour the mixture over the cracker crumbs. Top with the rest of the crumbs.

Refrigerate for at least 4 hours but best overnight.
