Lasagna

I have made this recipe for the past 50 years. It freezes well either before or after it is made. This is my husband’s favorite meal. Hope you enjoy it too.

This can be made ahead of time and refrigerated or frozen—remember to adjust your cooking time.

**Hint- after baking freeze in individual pieces for a quick dinner!

Serve with a beautiful green salad and garlic bread for a delicious meal!

Ingredients

  • 1 pound Hot Italian sausage 1 clove garlic-minced
  • 1 tablespoon dried basil 1 ½ teaspoons salt
  • 2-6oz cans tomato paste 1-1 pound can tomatoes
  • 10 oz of lasagna noodles 3 cups Ricotta cheese
  • ½ cup grated Parmesan cheese 2 tablespoons dried parsley
  • 2 beaten eggs 1 teaspoon salt
  • ½ teaspoon pepper 1 pound shredded Mozzarella

Instructions

Brown meat and spoon off excess fat. Add garlic, basil 1 ½ t. salt, tomatoes and tomato paste.

Simmer for 30 minutes stirring occasionally. Cook noodles according to package directions, drain and rinse. Combine remaining ingredients except for the Mozzarella. Place half the noodles in the bottom of a 9×13 baking dish, spread with half the cheese filling, half the Mozzarella and half the meat mixture.

Repeat layer.

Bake at 350 for 30 minutes or until bubbly. Rest for 10 minutes before cutting into 12 pieces.
