We served this in our cafe and there was never any left. It’s a hearty soup with a wonderful Italian flavor.
- 1 Cup diced onion
- 1 Cup
- diced celery
- 1 Cup diced carrots
- ½ Cup diced red pepper
- 8-10 Italian meat balls*
- 2 Cups beef broth
- 1 (24 oz) Jar of spaghetti sauce or marinara sauce
- 1 (2inch) cube of Parmesan cheese
- Salt* and pepper to taste
Saute vegetables in olive oil until tender. Add garlic, broth, meat balls, cheese and marinara or sauce. Simmer for about 25 minutes. Using an immersion blender, blend just until meat balls are broken into large chunks. Top with Parmesan shavings.
*Use your own meat balls or store bought.
*Watch adding salt-the cheese is really salty.
