We make these often when we go camping. We have a Cuisinart tabletop griddle that makes wonderful omelets!
- 4 Beaten eggs
- ¼ Cup diced onion
- ¼ Cup diced pepper (your choice of color)
- ¼ Cup crumbled cooked bacon or fully cooked sausage
- ¼ Cup grated cheese (your favorite)
On a stove top griddle or in a skillet, brown onions and pepper. Add bacon or sausage and heat thru. Remove from heat. Spread the eggs forming 2 rectangles. Place veggies and meat in the center. Add cheese and fold each end of the rectangle toward the center. Sprinkle with more cheese and serve. Top with sour cream or salsa.
