Peanut Butter Chocolate Chunk Cookies

These cookies freeze well!

Ingredients

  • 1 cup extra chunky peanut butter
  • 1 cup packed brown sugar
  • 1 cup granulated sugar-more for rolling dough
  • 1 cup softened margarine-not butter
  • 2 beaten eggs at room temperature
  • 1 teaspoon vanilla
  • 2 ½ cups of all- purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 package (11.5oz) semi-sweet chocolate chunks

Instructions

Cream together:

extra chunky peanut butter

packed brown sugar

1 cup granulated sugar

softened margarine

Add the eggs and vanilla.

Beat well.

Combine:

all- purpose flour

baking powder

baking soda

Add dry ingredients a little at a time, mixing well after each addition.

Stir in the chocolate chunks

Chill dough for 45 minutes.

Using a large scoop (2inches) make a ball and roll in granulated sugar.

Place on cookie sheets about 2 inches apart and bake at 350 for approximately 16 minutes. Turn half way thru baking.

Remove to a cooling rack.
