PECAN PIE BARS

PECAN PIE BARS

These are one delicious bar. This recipe calls for two trays and you should get 6-8 dozen bars. These freeze well and are tasty. We served them in our cafe years ago and were a big hit.

Ingredients

CRUST

6 cups all-purpose flour                 1-1/2 cups sugar

1tsps salt                                       2 cups cold butter

FILLING

8 eggs                                           3 cups sugar

3 cups light corn syrup                    1/2 butter, melted

3 tsps vanilla                                  5 cups chopped pecans

Instructions

In a large bowll combine flour, sugar and salt. Cut in butter until crumbly. Press into bottom and up the sides of two greased 15x10x1 baking pans. Bake at 350* for 18-22 minutes or until crust is golden brown.The filling, combine vanilla, corn syrup, eggs, sugar and melted butter. Stir well and add pecans. Pour over the crust and bake for another 30 minutes or until center is set. Cool. Store in refrigerator.
