Pecan Pound Cake

Pecan Pound Cake

I found this recipe in my “try this” folder. So I tried it and it was very good.

Ingredients

  • ¼ cup of Half and Half
  • 3 cups sugar
  • 2 teaspoons vanilla
  • 6 eggs
  • 1 Teaspoon butter nut extract
  • ½ teaspoon baking soda
  • 2 cups chopped pecans
  • 1 cup sour cream
  • 1 teaspoon salt
  • 3 cups flour
  • 1 and1/4 cups softened butter

FROSTING INGREDIENTS

  • 1 cup chopped pecans
  • 8 oz softened cream cheese
  • 1/4 cup softened butter
  • 1 teaspoon vanilla
  • pinch of salt
  • 1 pound confectioner’s sugar

Instructions

Preheat oven to 325*. Grease and flour bundt pan.

In a large mixing bowl, cream butter, sugar and eggs together. Sift together the flour, baking soda and salt. In a separate bowl, combine the sour cream, Half and Half, vanilla and butter extract. To the mixing bowl, alternately add the flour mixture and the sour cream mixture. Mix until fully incorporated. Fold in pecans.

Pour into the bundt pan and bake for 1 hour and 15-30 minutes, or until the toothpick comes out clean. Cool in pan. Frost and enjoy!

FROSTING- cream all together and stir in nuts.
