Sausage and Spaghetti Squash

This has become one of my husband’s favorites!

Ingredients

  • 2–3-pound spaghetti squash
  • 1-pound Italian sausage (we prefer hot but you can use sweet)
  • 2 cloves minced garlic
  • ¼ cup red onion
  • 1 ½ teaspoons Zaatar* or Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1-28oz can have crushed tomatoes
  • ¾ cup shredded Mozzarella cheese
  • ¼ cup Pecorino Romano or Parmesan cheese-grated

Instructions

Cut squash in half and scrape out the seeds. Place cut-side down on greased baking sheet.

Bake at 375* for 45-60 minutes or until soft

In a large skillet, brown sausage. Add the red onion and garlic cook until onion is soft.

Add tomatoes, salt, pepper and Zaatar. Simmer about 10 minutes to warm the tomatoes.

Shred the squash and add to the mixture. Sprinkle with both cheeses. Bake at. 350* for 20 minutes or until the cheese is melted.

*Zaatar is a middle Eastern spice that contains: sumac, thyme, sesame seeds, oregano, salt and marjoram. You can find it at specialty food stores.
