Stuffed Mushrooms

This is one of our favorite appetizers. You can make as many as you want 2-or20. They are easy to prepare and the filling can be frozen for use later.


  • Large white button mushrooms, cleaned*
  • 1 Pound of Italian sausage-we prefer the hot
  • 1 Cup Italian bread crumbs
  • 4 Tablespoons butter
  • 1 Cup finely diced onion
  • 1 Tablespoon chopped, fresh parsley


Remove stems and surrounding soft membrane from the mushrooms. Chop stems and membranes into fine pieces. In a skillet, cook sausage and onions until cooked through. Add the butter, bread crumbs and mushroom pieces. Heat through. Stuff the mushrooms and place on a cookie sheet. Top with small pieces of butter and broil for 2 to 3 minutes until butter is melted and top is crusty. Remove from broiler and top with chopped parsley.

Use a damp paper towel to clean mushrooms. Do not clean under running water.
