Tomato Soup

This is one of those easy but comforting soups. If you add a grilled cheese sandwich, you’ll feel like a kid again!

Ingredients

  • 3 Tablespoons butter
  • 1 Medium onion, diced
  • 3 Stalks of celery, diced
  • 2 Cloves garlic, minced
  • 1 Teaspoon Zaatar* or Italian seasoning
  • 1 Cup stock (chicken, beef or vegetable)
  • 1 Tablespoon sugar
  • 3 (14.5 oz) Cans of diced tomatoes

Instructions

In a large pot, melt butter. Add onions, celery and garlic. Sauté until all are soft. Pour in stock, tomatoes, sugar and Zaatar or Italian seasoning.

Simmer for 30 minutes to meld the flavors together.

Using an immersion blender or electric blender*, chop the soup just until almost smooth.

Zaatar is a spice that can be found in a specialty store or on line. If you don’t have it you can substitute Italian seasoning.

*If using a blender, cover the lid with a towel to make sure the lid stays on.
